Firm and crunchy whole capers from the Capparis Spinosa grown across the Mediterranean and well known for their health benefits. Ligurian capers travelled the ‘salt roads’ to Piemonte, becoming part of gastronomic tradition in such dishes as Vitello Tonnato, veal with tuna and capers. Preserved in salt to preserve their intense flavour, they should be rinsed before serving.
