The famous Ascolana olive is firm and tender, uniformly green to straw yellow in colour and renowned for its full pulp and characteristic fermented aroma with a slightly acid taste, a culinary favourite for great chefs. Maintaining tradition, the olives are harvested by hand and the brine comes with added wild fennel and salt to guarantee conservation of the olives for over a year.

Owned by the Gregori family through four generations, the existing farm has evolved from an ambitious project to modernize its business uniquely dedicated to the Ascolana del Piceno PDO olive by planting over a thousand olive trees and establishing their own olive processing facility. The Ascolana Tenera olives have made this region famous and the family rely on experience handed down from grandparents to continue their passion for preserving its history.
